Harvest Time
Our family loves this time of year! The trees are beginning to turn, the nights are cooler, and it’s time to harvest fall vegetables. We have been BUSY in the garden harvesting string beans, tomatoes, peppers, spinach, collard greens, watermelon, squash, pumpkin, okra, swiss chard, beets, onions, more blackberries, and the last of the corn and lettuce.
The busyness is not just for harvesting but storing what we harvest - Canning, drying, freezing and enjoying the fruits of our labor through delicious meals straight from the garden.
Another reason why we love this time of year is because in just a few more days we will be making apple sauce, roasting pumpkin seeds, and harvesting our peanuts. Looks like homemade peanut butter is on its way!
We feel very blessed especially this year with our garden. This year we more than doubled the size of our garden filling every inch of it. We’ve grown things that we’ve never grown before and they’ve turned out beautifully. Our string beans, which we had to replant 3 times because they kept dying, have outdone themselves. We’re picking, every day, baskets full of strings beans. We planted 6 okra plants but only 3 survived. But those 3 are nearly 6 feet tall and are producing okra like crazy! Come get some if you want ;)
We have decided as a family that this year we will have a fall/winter garden. We have started preparing the garden beds and planting our fall/winter vegetables. We are praying that the Lord will continue to bless our garden and help it grow.
One of our biggest blessings we get from having a garden is sharing the blessings with other who are unable to have a garden. Just the look on their faces makes our hearts happy.
